BUSINESS 04 · EGG POWDER
The function of egg,
from beans and mycelium
We ferment soybeans with reishi mycelium, then blend in goat-milk whey and other functional ingredients to make a powder that emulsifies, foams and binds like egg.
WHY EGG ALTERNATIVES
Egg supply keeps shaking.
Food makers need a steady alternative.
Every avian-flu outbreak shakes egg supply and prices. Korea made emergency egg imports in 2017 and 2021, and US egg prices hit record highs in 2025. Eggs are hard to replace in bakery and processed food, so demand is growing for shelf-stable powdered alternatives with steady supply.
FUNCTIONS
Doing the jobs egg does
We design ingredients around each job egg does in food.
Emulsifying
Soy and whey proteins hold oil and water together — sauces and dressings.
Foaming
Whey protein traps air in batters — cakes and meringues.
Gelling & binding
Sets on heating and binds — noodles, patties, bakery.
Nutrition & flavor
Fermentation softens beany notes and adds a nutty taste.
INGREDIENTS
Ingredient design
The base is soybean. After reishi solid-state fermentation it is dried at low temperature and milled, then blended with grains such as mung bean and with goat-milk whey. Mung bean protein is widely used in plant-based egg alternatives; whey protein foams and gels well.
We design both whey-enhanced and fully plant-based blends for different uses.
- Soybeans fermented with reishi mycelium
- Blended with mung bean and goat-milk whey
- Dried below 60 °C, nitrogen-flushed packaging
